Okay, so I tried Instant Pot Apricot Chicken And Rice and failed miserably! My 14-year-old daughter loves Apricot Chicken And Rice- at least the Apricot Chicken And Rice recipe that my oldest daughter used to fix that is. This was my first attempt at trying to fix it in the Instant Pot and as I said a minute ago, I failed miserably. It seemed so easy in my head. I fixed the rice ahead of time in the rice cooker which was my first time cooking rice in the rice cooker and it turned out to be very sticky. I used the 1:1 (1 cup rice to 1 cup water) ratio with a pinch of salt and a teaspoon of olive oil and multiplied it times 4 to make 4 cups rice. The next thing I did was use 3 pounds chicken thighs (boneless, skinless) placed in the Instant Pot after pouring a tablespoon full of olive oil in the pot, emptied 2 jars of apricot preserves with 4 Tbsp. unsalted sweet cream butter, and then sealed the lid placing the high-pressure setting on 27 minutes.

I was improvising using an Apricot Chicken recipe I found online which had me emptying a small bottle of Russian (or Catalina) salad dressing, a jar of Apricot Preserves, and a packet of Onion Soup Mix onto a pound of boneless, skinless chicken breasts, sealing the Instant Pot and placing the timer on 25 minutes.

The chicken definitely got cooked- that is overcooked. I opened the pot to discover the overcooked chicken swimming in a pot of buttery Apricot Preserves- let’s just say YUCK! and get it over with already:o).

Obviously, this recipe is going to take some serious modification as in let’s not try this again! I think I’ll just stick to the oven method using a casserole (the Polish Pottery Summer Vine Large Oval Baker with Lid that I just got as a present is my favorite casserole) or on the stovetop (the Lodge EC7D33 Enameled Cast Iron Dutch Oven, 7.5-Quart, Caribbean Blue is what makes cooking on the stovetop such a dream for me) maybe that is unless you folks can give me a helping hand. If you have any suggestions please feel free to leave me some ideas in the comments section. I would welcome any helpful suggestions- that is unless you think I should just hang up my measuring spoons as in quit cooking- LOL :o)! Really I could never give up cooking now that I have found the new Instant Pot cooking appliance. I just love love love it and use it every day at least once but usually more often! You’ve just got to get one if you haven’t indulged and purchased yours yet!
